The taste of South Tyrol

From traditional dishes to sophisticated reimaginings and local chefs sharing their recipes, our cuisine features a healthy portion of love, quality ingredients and the cultural history of an entire province.

If you want to understand how diverse our province really is, take a look at the menus in our inns, farmhouse inns, award-winning restaurants and pizzerias – or simply cook at home for yourself. Welcome South Tyrol into your kitchen with recipes from up-and-coming and award-winning chefs.

As the scent of cinnamon and melted butter wafts through the kitchen, and golden-yellow breadcrumbs settle on small, round dumplings, our much-loved dessert is ready to be served.  Apricot dumplings with breadcrumb butter, made from tender curd dough, cinnamon, sugar and fresh apricots with marzipan filling,  is a classic  South Tyrolean dessert. This is one of the many indispensable dishes to have been featured in our cookbooks for centuries. But there is so much more to our cuisine.

Take advantage of our digital recipe collection and delve into our culinary world. Discover for yourself what makes our cuisine so unique. Search specifically by filtering options. For example, you can view only recipes for Mediterranean dishes or for vegetarian dishes , such as a colourful radicchio risotto or a cream of herb soup. Alternatively, sort directly by menu type and find your favourite dessert recipe

A celebration of fine dining

History-rich wine province

2,500 years of wine history, 5,000 passionate winegrowers and 300 days of sunshine every year. What makes South Tyrol so special as a wine province?

Lush green on gentle hillsides & brilliant sun that bathes the countless vines in warm light: our vineyards cover 5,700 hectares. Here, around different 20 grape varieties thrive, including excellent white wines such as Pinot Grigio and Gewürztraminer or red wines such as Vernatsch or Lagrein. There are also old varieties that have disappeared elsewhere, such as Blatterle or the ancient Furner Hottler variety.

The majority of the 5,000 wineries have been cultivated for centuries. Did you know that our wine history is incredibly old? Archaeological findings of vine knives show that wine-growing was practised here as early as the 5th century BC.

If you like being outdoors in nature and are interested in wine and its history, we have a tip for you: Explore the 150 km wine road between Salorno/Salurn and Nals/Nalles. While hiking or biking, discover vast vineyards, medieval villages and sample fine wines in wineries. Find all the info for your wine trip here.

Perhaps you’re keen to take part in a white or red wine tasting? 5,000 winegrowers nurture their grapes under the South Tyrolean sun.

What unites our many producers? Their years of experience in successfully farming even in the steepest areas, their passion and the South Tyrol Quality Seal. This special seal that covers ten product groups including herbs and eggs, all of which are grown and traditionally produced in our province.

If you want to know more about our quality products, find more info here as well as seasonal tours and workshops.

With love and taste

Those who buy their food directly from the farm, e.g. edible flowers, crunchy dried fruits, spicy Speck smoked ham or fruity-sweet apple juice, experience strong flavours but also learn a lot about our love of nature.

The lush green Alpine meadows are dotted with deep blue, bright pink and orange cornflowers and pot marigolds. Peppermint, rosemary, lemon balm and other organic herbs exude their aromatic fragrance. You'll find edible flowers or the finest spices for your kitchen and handpicked teas that find their way directly from nature into the tea bag at our many family-run herb farms with affiliated farm shops.

While journeying through South Tyrol, discover the variety of natural foods produced by our farmers according to traditional methods in harmony with nature . If you pass an orchard with fruit trees, the closest farm shop featuring natural dried fruits is surely not far away. There you can taste many varieties, such as dried pears or persimmon fruit, that are made on the farm. If you notice apple trees growing at unusual altitudes during your trip, there might be a farm store near you that sells mountain apple juice. Distilleries, vegetable growers and other producers also offer their products for tasting and sale.
