Crisp apples keep you refreshed throughout the day, spicy Speck smoked ham tickles your taste buds, and exquisite wines invigorate your spirit: a brief tour of South Tyrol’s culinary landscape will highlight the quality products that are typical of the region. In addition, the South Tyrolean seal of quality marks out high-end produce from our fields and orchards that is turned into premium products. This produce includes eggs from happy free-range hens, organic milk and tasty meat from appropriate livestock farming. All this food meets stringent criteria that are much tougher than merely the legally prescribed standards. It is both grown and processed on site, improving its taste while helping to protect the environment. South Tyrolean quality products are the result of fertile soils, a living tradition and dedicated producers. All of this is entirely in keeping with our gourmet region, which is small but perfectly formed.

South Tyrolean milk is produced fresh every day on mountain farms. It comes from the 4,500 or so family farms, which have an average of 15 cows and 8 calves each. Within 24 hours, the milk is taken to one of the 9 dairies in South Tyrol, where it is carefully processed into mozzarella, yoghurt, cheese and many other dairy products bearing the South Tyrolean seal of quality. Grey cheese from the Ahrntal valley, the local grey cattle, Ur-Paarl bread from the Vinschgau valley and the Villnöss sheep have one thing in common: they are all part of South Tyrol’s slow food circles. But what does that mean? These projects support and fund an agriculture model based on small-scale producers, their traditional knowledge and their handicraft skills. Respect for animals and the environment is the top priority.
